Thank you, wonderful Hipcooks, for such a lovely 2007!
This is the last missive of the year, and I have good tidings!

  • The new schedule is posted through to the end of year, and January.  Feb classes will be posted Jan 1.  www.hipcooks.com has the details, so please click away!  (Hipcooks West classes will be posted as soon as I get occupancy.)
  • Hipcooks West Opening  & Knife Workshop & Holiday Sale & Party Extravaganza
Aw, yeah!  I have no certificate of occupancy just yet, (but work is finished with last details), so why not use the space for a Holiday Sale and Soft-opening party, just for us? 
Hipcooks West Knife Skills Workshop, Sunday, Dec 9th, 2 - 4 pm:
A bunch of you have been clamoring for a Knife Skills session, so we are putting one on that day as well.  But here's the deal - I don't feel right charging for the class so I am offering it to you for free!  You must sign up online, limited spots.  Please use Gift Certificate Number "Hipcooks Totally Rocks!" to sign up.(I know it is not a number, but it will work).  The first session is from 2 - 4pm and I might add another.  See below for address.

Hipcooks Holiday Sale & Party Extravaganza! Sunday, Dec 9th, 3 - 6pm

We're a a couple of blocks north of the 10 Freeway at Robertson, nestled inbetween Fred's Bakery and the CA Sushi Academy.  Rock on!

  • And last but not least - if you cannot join us for our party but wondered what we'll be cooking up - try these.  Totally heavenly
Chocolate Earl Grey Truffles

2/3 cup heavy cream
2 tablespoons unsalted butter, cut into 4 pieces and softened
2 teaspoons loose Earl Grey tea leaves, Loose tea leaves tend to be of higher quality than tea bags, giving the truffles a fresher, more distinct flavor.
6 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1 cup unsweetened Dutch-process cocoa powder for rolling, or tempered dark chocolate for dipping

Bring cream and butter to a boil in a small heavy saucepan and stir in tea leaves. Remove from heat and let steep 5 minutes. Don’t oversteep or it will become bitter.

Meanwhile, finely grind chocolate in a food processor and transfer to a bowl. Pour cream through a fine-mesh sieve onto chocolate, pressing on and discarding tea leaves, then whisk until smooth. Chill ganache, covered, until firm, about 2 hours.  Mmmmm.  Earl Grey.

Spoon level teaspoons of ganache onto a baking sheet. Put cocoa in a bowl and dust your palms lightlywith it. Roll each piece of ganache into a ball. Drop several balls at a time into bowl of cocoa and turn in cocoa to coat. Transfer as coated to an airtight container, separating layers with wax paper. If you prefer to dip in truffle into chopped nuts, then chop pecans or almonds and roll the truffle.
